- Being gluten-free takes a lot of processed foods,(and especially sweets), out of the game.
- I found a recipe for vegan, gluten-free, dairy-free banana chocolate chip cookies that have 4 ingredients.
- They satisfy my rampant sweet tooth and A liked them too.
- The texture might throw you at first, but the flavor is really good.
- Here you go: Take 3 ripe bananas, mash em' really well in a medium sized mixing bowl. Add 1/2 c. dark chocolate chips, 1c. oatmeal, (I used GF instant oatmeal with raisins), and a big tablespoon of peanut butter. Or almond butter, or any nut butter that you have on hand.
- Bake at 350 degrees for 15 min. I baked mine longer because I wanted crispy edges, but I'm thinking that might be the reason the texture was slightly rubbery.
- My lunch obsession this week: sliced cucumbers on top of hummus,(or baba), with mint, a slight drizzle of olive oil, and S+P on GF bread.
- Lunch update: While the recipe calls for humus, in the past I've always used babaganoush and now I know why.
- Humus, fresh and home-made or packaged, no matter how organic or farmers market fresh I have found it, is dead to me and is now added to the list of foods that I ate so many times in my life I now cannot take another bite of you.
- I've been having a thing with this salt for awhile now.
- I've completed my first week of my photoshop course and thankfully, I like the teacher much more than my first impression.
